alla fine, se hai deciso di fare una Belgian Pale ale, basta attenerti alle caratteristiche dello stile! Dal Beer Judge Certification Program:
16B. Belgian Pale Ale
Aromarominent aroma of malt with moderate fruity character
and low hop aroma. Toasty, biscuity malt aroma. May have an
orange- or pear-like fruitiness though not as fruity/citrusy as many
other Belgian ales. Distinctive floral or spicy.
Yeasts prone to moderate production
of phenols are often used but fermentation temperatures should be
kept moderate to limit this character.
Quindi poco luppolo, moderato fruttato e prominente Malto, preferibilmente tostato e biscottato. Bisogna far lavorare il lievito a temperature non troppo alte per non accentuare il carattere fruttato. Quindi lievito:

Wyeast 1762 - Belgian Abbey II (SECONDO ME IL PIù INDICATO)

Io direi al max a 18°, che è il limite inferiore consigliato per il t58 e quasi tutti questi liquidi

quindi niente dry hopping, visto il "low to none" per il luppolo...

Secca si ma senza esagerare, visto il finale leggermente dolce

Ok l'estratto light in sostituzione del Pilsner, ok il carapils come speciale ma ti indica chiaramente un po' di caravienna o caramunich per colore, corpo e complessità. A sto punto io farei 250 di carapils, 100 di vienna, 100 di munich
